New Bern NC Food Truck Mari's Hella Fat FoodMari’s Hella Fat Food is MY DREAM COME TRUE!!!!!! Bringing a food truck to the New Bern NC area specializing not only amazing food but bringing a great atmosphere for all to experience is SOOOOOO exciting. I’ve been a resident of New Bern NC for over 20 years and have eaten at probably every establishment in town and every surrounding town. I LOVE food! But more importantly I absolutely love to cook for others.  You can ask anyone!!!

New Bern NC The Start of Mari’s Hella Fat Food…The decision was made to go into business and instead of brick and mortar, we decided the truck route was the way to go.  It seems more personal to me than a storefront.  The hunt began to find the right truck that not only had the equipment and the right engine but just seemed like the deal of the century. Scouring the internet began taking up each and every free second.  We made phone calls.  We made visits. Should we get a brand new trailer?  Should we get a truck?  A trailer won’t break down… a truck can break down….  A lot of places don’t like trailers because they lack easy maneuverability and take up too much space.  It’s ridiculous the rules and laws regarding food trucks-not only in this area, quite a few other states have even more ridiculous laws than we do. I mean you wouldn’t believe it!!

We thought we found our truck!!!!  It was in Bedford, VA and the owners Mike & Cheryl were getting out of the food truck business because of some medical issues.

Next the 300+ mile commute started to go see the food truck in person. Once we arrived there and laid our eyes on the food truck we realized this was the one for us. And not only did the it look amazing but Mike & Cheryl were amazing people and we even had things in common such as (Veterans, Harley owners, and a Mason, anddddd…he had a framed picture of Jerry Rice in a Raiders uniform, although he says he’s a 49ers fan)…So the stars aligned and the deal was made.

There is so much more planning and things required such as permits, menu, lettering, advertising, etc….Those are all things that we are working on daily in order to be ready day one when we open….I swear, I can’t  wait.

I wonder if anyone who decides to own/operate a food truck thinks it’s just a matter of “Oh hey, I’ll buy a truck, load it with food and just sell food to my heart’s content!!!!!  Everyone will love it and I’ll live happily ever after!!”

Not the case.  LOL.  We got the truck.  We drove 4 and a half hours to Bedford, VA to pick it up.  It made it home perfectly.  Then we realized some fluids were leaking, lights weren’t working, it’s temperamental when you take off.  Or not take off–that’s probably a better description.  I feel sorry for anyone behind us when we are “taking off”.   Mr. Boombastic has to find the sweet spot and then he’s happy and goes.

We spent the better part of all of last week prepping.  Aside from the slider buns and the tots and hot dogs, nothing is store bought.  Everything is made from scratch and I LOVE IT!!!!  I tossed around the idea of baking buns from scratch but remembered I also have a 40/hour a week job and there just isn’t time.  Hell, I’d make my own hot dogs if I had half a clue.  We hand patty the sliders, 1 oz patties each (4 go in each adult meal, so it’s like a Quarter Pounder, except they’re delicious).   We roast the pork butt low and slow and hand shred it.  The BBQ sauce is made from scratch and our slaw is made fresh each time we hit the road.   I can’t believe how much shredded cabbage comes from one head!  It’s constant prepping, totally hands on.   There is no rest, that’s for sure.  Luckily I’ve never been one for rest.

Then there’s the cleaning part.  My truck is cleaner than any kitchen I’ve been in (I mean besides my home kitchen).  When you’re the only one using your equipment there are no excuses for things not being clean.  So there’s that.  It’s a little bit tedious.

Having to use a commissary for all your prepping is a challenge as well.  You can’t just get all your items and drop them off without forgetting something, or missing your favorite pots, pans, utensils.  People actually work at the commissary, it’s their real job.  And there you are…having to ask questions, or having to make sure you can use this or that for fear that they are going to have to use said item.  Sharing space is a pain in the ass.  I don’t like being in anyone’s way, or at anyone’s mercy.  And that is how a commissary feels.  I understand the concept.  I’m just not a huge fan of the rule.  What do you do.

We had a trial run at the house with friends we knew would provide honest feedback and recommendations and ideas.  That was a breeze.  Our actual first night, I’d consider it a soft opening, was at Live at the City Laundry.  We were nervous.  And tripping over each other and unorganized even though we’ve rehearsed it time and time again.  I don’t think anything prepares you for Go Time when it’s your first time.  Thankfully it was a relatively slow night and the customers were cool as shit and easy going.  I forgot someone’s side of slaw, and when I remembered, they were long gone.   Probably not the greatest night for 5 star reviews but it was really good for us.

Two days later we had a gig at Riverside Subaru.   IT WAS AWESOME.  3 hours nonstop.  And I mean we did not stop.  We did forget someone’s sliders… Lucky me, it was a super awesome dude who works at BSH where I work full time and he was very patient.   He really should have tossed a brick at my head to wake me up   Ah, it was hella great though!!!!!!

We’ve been pounding the pavement and are booked up for the next couple of months with the exception of a Friday here and there and lemme tell you….Busy is GOOD!!!  One thing that I was really naive about coming into this business was the fact that people want you to pay them to have you at their events.   I always imagined it like a bar asking a band to come play at their establishment.  Have you ever heard of the band paying the bar to let them come play?   Me neither.   But that’s not the food truck world.  We have turned down a few events.  It’s not just the entry fee that comes into play.  It’s that, how many other trucks are going to be there, how many people will be in attendance?   You sort of have to weigh all that out to make sure it’s worth all your prep time, travel time and just time in general.  It’s interesting.

Most of all, it is FUN!!!!!!

Mari’s Hella Fat FoodFood Truck New Bern

You can probably tell how stoked I am about this food truck new bern . I hope you are, too.

We just spent a week in The Bay Area where the term “hella” was originated. I’ve been using this word since I was just a kid. I remember going to camp when I was 13. I met a cool chick named Amesha Smith, a native of Southern California, who had no idea what I was saying when I dropped “hella”. It was funny trying to explain it. I distinctively recall saying “But, you’re from California!!! How can you not know this word??” Alas, they just don’t use it like we do. While brewery hopping one night, I asked several locals what it meant to them. “A lot” “A ton”. “The most” “Very”. “Extremely”. What a good word.

I started talking about this before we even had a truck. We DO have the truck now. It was clean but not MY clean. I’ve spent hours cleaning it. Babe painted the inside. We have our appliances. We have running water. We have fire!!!! I mean, our logo isn’t even on the damn thing yet!!! Hopefully we will see it in all it’s glory by the end of next week. It’s a work in progress, it’s not been easy work, but it’s been rewarding as hell. Hella rewarding, if you will.

We’ve come up with some awesome ideas like using a different charity or organization every two months and donating proceeds to that charity. My idea is to have them revolving annually but that’s subject to change. We started Slide It Forward which is our spin on paying it forward. We aren’t even up and running at the moment but that idea has taken off and people have actually already started doing that. Some for family. Some for someone they don’t know. They just want to be a part of it. I think it’s amazing. I do have a secret to tell though. While we were in NorCal, we were at Alameda Island Brewing having a couple of flights of beer and noticed all these clips on their bar walls clasping popsicle sticks. Each stick had a name. I asked what’s up with those and they said it’s how their patrons can pay it forward. People will buy someone a beer and their name goes on a popsicle stick and when that person comes in, bam! Their beer was paid for. They have a lot of Coasties there, so it is such a great treat for the guys when they come back to town and belly up to the bar. So, basically I hella swiped that idea. I LOVE IT!!!!!!

When you see our menu, you’ll notice that all of our names are literally 80’s/90’s hip hop tunes. Who doesn’t love starting their day with the Beastie Boys? I mean c’mon!!! I’m sure you’ll hear the music coming from inside the truck if you’re nearby Food Truck New Bern,NC.

Everyone has been awesome and patient. I’ve had a couple of critics telling me I shouldn’t advertise or promote since I’m not ready yet. Wrong. That’s no way to get your name out there. I’ve heard I shouldn’t talk about it since I’m not official or whatever their reasoning is. Let me assure you, guys! I’m a SURE THING!!!! Count on that. Enough with the negativity though. No one needs that.
